Christmas has been a very blessed time of year for me this year... I was able to make it home to New Mexico to spend the holidays with my family and friends. Christmas day was a quiet affair, just me, my mom, and a couple of her friends. We had pesole, turkey enchiladas, and chile relleno casserole. It was a wonderful wonderful Mexican food Christmas. Please take some time during these holidays to relax, be at peace, and to count your blessings.
